Dessert of the Day: Strawberry Vanilla Pudding

I receive the Raw Food Society of BC newsletter via email, and in the most recent one was an interesting recipe for pudding.  I made this one entirely in my food processor and it came out perfectly - or at least I think so. . .it's very tasty - try it out!
Ingredients:
6 large pitted medjool dates, soaked for 2 hours and drained
1 large avocado
1/4 cup almond milk
1 tsp vanilla extract OR contents of 1 vanilla bean
5 large straberries, quartered
Goji berries (optional)

Preparation:
1. Place avocado and dates in a food processor and pulse to combine. Turn machine on and drizzle in almond milk and vanilla with water running. Also with the motor running, drop strawberries in one by one; the may not blend evenly at first, but they will eventually!
2. Garnish with goji berries, mint sprigs, or fresh fruit. Serve!

VitaMix option: If you're using a VitaMix or another high speed blender, simply blend all ingredients and serve.

Dessert of the Day-Chocolate Pudding

In this month's 'Whole Living' Magazine there's a section on raw cooking with some delicious looking recipes. One in particular i HAD to try immediately was the Chocolate Pudding made with avocado.  I was a little unsure about having avocado in my dessert but it has a smooth decadent texture and although it's taste is different than other conventional pudding I've had in the past this is definitely a recipe to try out.

Honey, Vanilla
