Date Night - Dinner and a Movie - Machete

Phil and I started doing a themed date night we're un-originally calling 'Dinner and a Movie' night.  We're aiming to do this once a month to start.  We'll take turns choosing a movie and planning a dinner that suits the theme/setting/time of the movie.

It's been awhile since I've done a Dinner and a Movie night and unfortunately this one was a solo date night - but quite enjoyable nonetheless.
The third movie choice was:

Of course it was a Mexican themed evening.  I had a Margarita and Fish Tacos with Guacamole for dinner.  Although I'm not a huge fan of gory movies, I love the style of these types of movies.  If you haven't seen it before - seeing Steven Segal is reason enough to watch it.  Trust me.  Ridiculous. . .
Although I don't normally drink alcohol (I think I'm actually allergic to it) I had to make myself a Margarita (I picked up a bottle of Mexican Tequila on our last holiday and hadn't opened it yet).
 Salsa!  I don't use a recipe anymore for salsa - just chop up some tomatoes, red onion, throw in some lime juice, some garlic and cilantro. Easy Peasy Lime-on Squeezy. Ha. . .
Corn Tortillas!  I actually don't prefer the texture of these tortillas but the flavor worked well with the filling.
This recipe was pretty basic when compared to the tacos I usually make at home but were surprisingly tasty.  I forgot about the salsa recipe that was recommend on Martha's site so I made my own simple salsa and found it worked nicely.
For dessert - Mexican Ice Cream Sundaes with Cinnamon-Chocolate Sauce.  I originally intended on keeping my dinner as authentically Mexican as possible which is why I bought dulce de leche ice cream instead of grabbing regular vanilla.  BOY WAS IT WORTH IT!!!  So yummy. . .and this one was half the fat of their regular dulce de leche. Yes please!
My sundae!  I had to remake the sauce 'cause the first time was way too bitter for my liking.  I just added more cream and some regular chocolate chips which did the trick.  The cinnamon was a nice compliment to the chocolate and reminded me of the hot chocolate I had back in Mexico.
I heated up some mango slices in the oven and would have proffered it cold.  I also think it could have been a bit more ripe as well but oh well!  Still yummy.

Date Night - Dinner and a Movie - Red Riding Hood

Watching this particular movie was a first for Phil and I, so for our dinner menu I based it entirely off of items one may bring to an outdoor picnic.

I made Caprese Sandwiches (Turkey for Phil), and used this recipe - minus the grilling part - they were fantastic, nice and simple.  For a side dish I made this bean salad the night before (it always tastes better the next day) and finished off with Almond Fruit Bars for dessert.  Yum!
The movie wasn't too bad, not entirely what I was expecting but we had a good time watching it.  I wore the sweatshirt to wash my car earlier in the afternoon and totally didn't wear it specifically for the movie but it works, no?

Dessert of the Day: Almond Fruit Bars

Recipe
For our last Dinner and a Movie night  I made these bars for our picnic theme.  They were quite easy to make, not overly sweet with a nice crumbly almond/flour texture.  Next time I'll try using a berry jam only - these were peach and strawberry but the peach kind of stole the show.

Date Night - Dinner and a Movie - American Graffiti

 I've seen this movie a couple times but it was Phil's first time seeing this one.  I was curious to see if he'd enjoy a movie set in the sixties as much as I do.

Our menu obviously had to be diner-type food so burgers, fries and a shakes it was.  I originally thought I would make the food at home but Phil thought it was very important to keep it authentic and get take-out (insert eye roll here).
The best part was that I didn't realize Mr. Ford was in it.
