A kind lady at work gave me an enormous zucchini to take home which resulted in two loaves of Chocolate Chip Zucchini Bread. Although this recipe made a lot, I still have a ton of grated zucchini left in my fridge. Any suggestions?? My freezer is packed to the max so I'll have to come up with another solution. No more Zucchini bread though...
The only change I made to this recipe was that I used raw sugar and only used half of what was required. It may have been a gutsy move (or maybe not, I'm no professional chef...), but luckily it was a good one. With chocolate chips, I don't think the bread has to be overly sweet...
