Dessert of the Day: Quinoa Powerball Cookies

I found this recipe in a Save-on-Foods insert of our local newspaper and at first glance this recipe seemed a little wack-a-doo but figured why the heck not?  Since I needed some baking therapy and the recipe was fairly simple it's the perfect recipe to tackle on a weeknight at 9:30pm.  (recipe below)
 I substituted the dark chocolate chips for cocoa nibs and added dried cranberries to change it up a little bit.  Boy this recipe made a lot of cookies!  It probably would be sweeter with the chocolate chips but I found these to be fine as far as sweetness goes.
 Phil described them as 'banana bread gone rogue' and I agree.  They're a little odd but tasty nonetheless.  Give 'em a try!
Quinoa Powerball Cookies
4 large ripe bananas
1 tsp vanilla
1 cup cooked quinoa
1 cup rolled oats
1 cup unsweetened coconut flakes
1/2 cup coconut sugar (I used cane sugar)
1/2 cup dark chocolate chips (I used cocoa nibs + 1/2 cup dried cranberries)

Preheat oven to 375 F

In a large bowl mash bananas and then add the next five ingredients.  Then stir in chocolate chips.

Line baking sheet with parchment paper and drop heaping tablespoons of batter onto baking sheet.  Bake for 25-30 mins. or until cookie holds together (mine only took 20 mins.) Transfer to a wire rack to cool.
