I cleaned out my freezer on the weekend and found a small tub of buttercream icing that I had previously made for this party.
So after thawing it out I decided to make Bethenny Frankel's 'How Is This So Moist Chocolate Cake' from her awesome book 'The Skinnygirl Dish'. This recipe is super super easy - mostly 'cause it doesn't require a billion extra bowls, beaters and such.
Although I think maybe you should read the whole book (it has many useful tips and yummy recipes), the recipe can be found here on this site. And the icing recipe can be found here (but it makes A LOT so you might want to half the recipe...).
I added some fresh (so fresh they were on the verge of being mushy...) raspberries on top.
After taking a bite I couldn't believe how moist this cake was! I didn't use oat flour, I used a mixture of five different kinds ('cause that's what I had in my pantry and Bethenny's all about using what you have...ha-ha) and I also used the evil white sugar 'cause I also have some sitting in my pantry and I'd like to get rid of it.
