So last weekend Phil and I were invited for dinner and I was asked to bring a dessert.
A couple hours before we had to leave.
And all I had in the fridge/pantry were ingredients to almost make a recipe.
"If I had this...I could make that..."
AGH!
So after a very brief 'I don't want to go to the store, help me help me' moment I came up with this very simple and speedy recipe:
I had three very ripe peaches sitting in the fridge so I cut them up and divided them amongst four short drinking glasses.
Next I whipped up an Instant Pudding packet I had from 'Epicure' (I used almond milk and it worked well)
Next I made whipped cream (dream whip I think?)
Lastly I topped them with some raw cacao nibs.
The whole process took me approximately 20 minutes.
Not bad, even gave me time to get ready!
